Well, here it is, M’s first lunch for the 1st grade. I made these Quinoa Veggie Burgers and Crispy Dijon and Dill Potatoes last night and M requested them in his lunch today. LOVE when he wants leftovers! It makes my job so much easier. I purposely made a double batch of the burgers so I could freeze them and dole them out later when I’m not in the mood to cook. I used a flax egg (1 tbsp flax meal mixed in 3 tbsp warm water) instead of a real egg. A protein packed nutritious lunch! What did you send with your kids today?
