Day 6 – Shredded Chicken Tacos

Leftovers for lunch…my favorite!  I made Shredded Chicken Tacos in the crockpot the other night that could not be easier.  I’m adding in a soft flour tortilla, shredded Mexican style cheese, corn kernels cut fresh from the cob and sweet potato corn tortilla chips (Simply Sprouted Way Better Snacks brand…NON GMO Project verified).

I know your next questions is going to be, “Does it stay warm?”  No, not in this lunchbox.  Luckily, M doesn’t mind room temperature food.  You could certainly heat a thermos and put the chicken, cheese and corn in there and it should keep just fine until lunchtime when your wee one can assemble his/her own soft taco.

Day 6 - Shredded Chicken Tacos

Shredded Taco Chicken, Shredded Mexican Style Cheese, Flour Tortilla, Corn, Sweet Potato Tortilla Chips

 

Crockpot Shredded Chicken Tacos

Ingredients

  • 2lbs chicken breast
  • 1 jar salsa
  • 1 packet taco seasoning

Directions

  1. Place all ingredients into the crockpot.
  2. Cook on High 4-6 hours or Low 6-8 hours.
  3. Serve with your favorite taco fix in’s.
