Day 10 – Sunbutter & Jelly on English Muffin

I like to switch between peanut butter, almond butter, sun butter, etc., throughout the weeks.  This way it seems likes I’m giving him something different even though it’s really pretty much the same thing.  Same with breads – whole wheat bread, sprouted grain bread, rye bread, tortillas, pitas, english muffins, etc. It just gives a little variety to the mundane.  I had all of about 5 minutes to figure out lunch for him today.  I packed it yesterday evening in between dinner, dinner dishes, babysitter coming over and me running out the door.  I NEVER leave lunchbox filling until the morning because it’s just way too hectic at that time of day (not that yesterday evening was much better).  I kept it simple and this is what M will be eating today:

Day 10 - Sunbutter

Sunbutter and Strawberry Jelly on Whole Wheat English Muffin, Sugar Snap Peas, Clementine Slices, Cucumber Slices w/ Spicy Hummus


Spicy Hummus (Oil Free) – makes about 1.5 cups


  • 2 cups cooked chickpeas
  • 1 garlic clove, peeled
  • 2 tbsp tahini
  • 1/2 tsp cumin
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 cup salsa (your favorite)

Process all ingredients in a food processor.  If you like it a bit thinner, add more salsa (or water) a tbsp at a time.
