You guys, this lunch (or dinner) idea is so simple, yet so delicious. Homemade hummus spread on a tortilla, folded in half, and pan seared in a little bit of butter (I used Earth Balance…it’s vegan). Voila! My kids went nuts for these last night and M asked for some in his lunch today. Add in some fruits and veggies and you’ve got a meal. So quick and easy.
