I made this Gingerbread Granola the other day as part of a dessert recipe I was working on. The recipe as a whole didn’t really work out, but M LOVED this granola. I used oats, pecans, pumpkin seeds and tricolor quinoa, so it has lots of protein. Personally, I don’t think it has quite enough gingerbread flavor, so I’m not sharing the recipe just yet. It’s a work in progress. But he can’t seem to get enough to it. So, into his lunch it goes along with some Plain Greek Yogurt and apple slices.
