Day 80 – Cinnamon Raisin Toast & Homemade Raspberry Pineapple Chia Jam

Day 80….wow! 80 lunches under our belts already. It seems like we have a million more to go, doesn’t it? We can do this! Well, it’s day 5 of clear out the pantry/fridge/freezer week and we made it! I actually think I like today’s lunch best of all. Yesterday, I decided to make use of some of the frozen fruit in the freezer. On an average day, we have no less than 4 bags of frozen fruit. I love to use them in smoothies, muffins, pancakes, etc. They are super versatile and will last forever in your freezer. Fresh berries, although divine, go bad within days. I decided on raspberries and pineapple and set to work making homemade jam.  Homemade Jam. Doesn’t that just sound deliciously sweet? Raspberry Pineapple Chia Jam to be exact. I used chia seeds to hold it all together because I always have chia seeds in the house (so many uses for these tiny black seeds and they are uber healthy). This jam is vegan friendly and refined sugar free. Recipe coming soon….. I spread this delectable jam on a Ezekiel Cinnamon Raisin Toast with a little bit of Earth Balance Butter. Some fruit and veggies are taking up space in the lunchbox, of course. And, because it’s the start of Winter Break after school today, I added in some Wild Oats Organic Double Chocolate Oatmeal Cookies. Day 80 - Homemade Jam Ezekiel Cinnamon Raisin Bread spread with Earth Balance Butter and Homemade Raspberry Pineapple Chia Seed Jam, Carrot Ribbons, Orange Slices, Wild Oats Organic Double Chocolate Oatmeal Cookies Speaking of winter break, M is off for a full two weeks.
