I made a delicious Barley Vegetable Salad for dinner last night. Lots of shredded veggies were involved and I had quite a bit leftover. I’m planning on making a slaw out of those leftovers today, but first I used a little bit in M’s wrap. We’ve got shredded green cabbage, zucchini and carrots. I added a slice of deli turkey and mozzarella and rolled it all up in a tortilla. Some fruit and a few potato chips and lunch is served!
