It’s Day 150!! Can you even believe that? We’ve come along way…only a little bit more to go. We’ve got this!
I made this Mexican Bean Dip yesterday. I make it all the time because it’s SO good. I though it was a good snack in honor of Cinco de Mayo coming up. We ended up eating this bean dip and chips for dinner last night. It doesn’t seem like a proper dinner, but really, all the food groups are there. This dip is chock full of protein, fiber, vitamins and minerals! I will have the recipe up soon on Veggie Inspired Journey…stay tuned. Of course, M is getting leftovers for lunch upon his request.
I threw in an orange and a slice of provolone to complete the box.
