Day 173 – Last Day of School – Cereal Bar, Fruit and Veggies, and Brownie

We made it! 173 days of packed lunches. Mostly nutritious ingredients with a few treats here and there (and almost all of those were homemade!). Above and beyond anything they would get in the cafeteria and much healthier and varied than most standard American sack lunches.

Today’s post is bittersweet not only because my little guy is no longer a 1st grader, but also because I do not intend on continuing this blog after today. I will continue to send my kids to school with healthy packed lunches throughout the years, but I no longer have the time to dedicate to writing the posts.

Day 168 – English Muffin

One week from today is the last day of school! It was supposed to be this week, but they have to make up all the cold/snow days from the winter.

Today, M is getting an English Muffin spread with peanut butter and sprinkled with hemp hearts. Hemp hearts are kind of an obsession of mine. I sprinkle them on everything (toast, oatmeal, cereal, ice cream, rice bowls, noodle dishes, etc). If you haven’t tried them, you should! They are tiny crunchy nutty perfection! Super high in protein, omega-3 fatty acids, iron, and Vitamin E, these tiny seeds are consider a superfood!

Da y 166 – Belgian Waffle

I hope everyone had a nice Memorial Day weekend. We FNALLY got our garden planted and I’m so excited!

Less than 2 weeks left of school this year. Seems crazy that my little guy will soon be a SECOND grader! Wow!

The kids were at their grandparents this weekend and my MIL made awesome Belgian waffles one morning. There were plenty of leftovers and they were nice enough to send them home with us. M is getting part of one in his lunch today!

Day 156 – Mini Frittatas

I hope all of the moms out there had a wonderful Mothers Day yesterday. We had a great day spent with my in-laws. We ate a delicious brunch cooked by my sister-in-law and Matthew is getting some of those leftovers today!

2 mini frittatas and 1/2 of a biscuit are all from yesterday’s brunch. I added some leftover roasted corn and chickpeas from the other night and a clementine.

Day 155 – Fig Bar, Fruit and Cheese

I don’t know about you, but I am having summer fever and don’t even feel like making dinner or lunches anymore! We were outside playing yesterday until 7:30p. We had smoothies for dinner (M’s request and I happily obliged). I couldn’t even be bothered to make a sandwich for his lunch today.

He’s getting a Blueberry Fig Bar, fruit and two pieces of provolone.

Day 144 – Bagel and Fruit

It doesn’t get much easier than the classic PB&J, like in yesterday’s lunch. Except for maybe today’s lunch – Bagel and butter. We don’t use a lot of butter in this house…well, actually it’s Earth Balance Soy-Free Dairy-Free Buttery Spread…a whole tub will last us many months. We almost never have bagels either. However, when we do have bagels, M likes them simply with butter. And NOT toasted. At least this is a whole wheat bagel. Lots of healthy fruit and veg on the side and he will be one happy camper at lunch time!
