Day 147 – Leftover Grilled Chicken

I had a bit of leftover grilled chicken in the fridge from a salad the other night, so M is getting the rest of it in today’s lunch. He, of course, wanted ketchup to dip it in…so that’s in the little tin. A slice of provolone cheese, fruit and veggies on the side and lunch is served!

Day 145 – Spaghetti and Turkey Meatballs

Happy Friday, Friends!

Last night’s dinner was spaghetti with Veggie “Meat” Sauce and Turkey Meatballs. The turkey meatballs were Trader Joe’s brand and the kids loved them. The Veggie “Meat” Sauce we all also loved. The texture resembles meat, but it’s all finely chopped veggies. Yum! This recipe is from the lovely Sophia at Veggies Don’t Bite. Check it out!

On the side is a clementine and a Cinnamon Chickpea Blondie! You guys MUST check out my new recipe for these awesome blondies! They are soft and fudge in the center with a little bit of a crackly top…so delicious…and healthier than your average blondie.

Day 142 – Asian Turkey Lettuce Wrap and Veggie Fried Rice

You probably think I forgot to post again. Actually, M requested leftovers from last night in his thermos and it’s really just easier to pack the thermos in the morning. So, here it is:

Last night we had asian turkey lettuce wraps and veggie fried rice. (I also had crispy asian tofu, but M wanted nothing to do with that!). Today, he is getting a combo of the asian turkey mixture sans the lettuce wrap with the veggie fried rice…all mixed together. He asked for a plum on the side and, at the last minute, I threw in a small container of the homemade chocolate peanut butter popcorn I made yesterday (so last minute that it didn’t make it in the picture).

Day 141 – Fish Nuggets

M requested that I get some of these fish nuggets at the grocery store this weekend. He’s had them all of ONE time before, but apparently, they made an impression on him. Not sure what got him thinking about them this weekend, but after popping a rib out of place Saturday morning and not being able to move pretty much all weekend, I was all too happy to throw these in the oven and call it dinner. So, today he is getting some for leftovers!

They make a nice little fish sandwich on a small bun too!

Day 132 – Chicken Noodle Soup

It will be interesting to see what comes back in M’s lunch today. I asked him last night what he wanted for lunch and he said, “chicken noodle soup!” We just happen to have some leftover from a couple days ago. I’ve sent him with a thermos all of ONE time in his school career. Last time it was simply penne with marinara if I remember correctly. ┬áHe ate about one bite and later said he didn’t want to eat from a thermos. So, I never sent it again. (I was sad about this because it really limits the lunch possibilities if he refuses to take warm food.)

So, here we go…take 2. I asked him 5 or 6 times just to be sure. “You really want the chicken noodle soup? In the thermos?” Yes to both questions every time. We shall see.

Oh, and he also wanted a plum and cucumbers on the side.
