Day 168 – English Muffin

One week from today is the last day of school! It was supposed to be this week, but they have to make up all the cold/snow days from the winter.

Today, M is getting an English Muffin spread with peanut butter and sprinkled with hemp hearts. Hemp hearts are kind of an obsession of mine. I sprinkle them on everything (toast, oatmeal, cereal, ice cream, rice bowls, noodle dishes, etc). If you haven’t tried them, you should! They are tiny crunchy nutty perfection! Super high in protein, omega-3 fatty acids, iron, and Vitamin E, these tiny seeds are consider a superfood!

Day 158 – PB&J on Rye

Classic PB&J today, but on rye bread to switch it up a bit. Plum slices and yellow bell pepper strips for the fruit and veg. And a Cinnamon Chickpea Blondie for a healthy dessert. I posted these blondies less than a month ago on my other blog, Veggie Inspired, and they are already the #2 most popular recipe! You MUST try them, you won’t be disappointed! If you need a nut-free option for your child’s lunchbox, try using sunflower seed butter instead of the cashew butter and leave out the walnuts.

Day 152 – Salami and Cheese

Happy Tuesday. This already feels like it’s going to be the longest week ever. Anyone else?

Today, M is getting half a salami and provolone sandwich. Fresh strawberries, cucumbers and half of a strawberry coconut cupcake. I guess it’s all about halves today.
