Day 173 – Last Day of School – Cereal Bar, Fruit and Veggies, and Brownie

We made it! 173 days of packed lunches. Mostly nutritious ingredients with a few treats here and there (and almost all of those were homemade!). Above and beyond anything they would get in the cafeteria and much healthier and varied than most standard American sack lunches.

Today’s post is bittersweet not only because my little guy is no longer a 1st grader, but also because I do not intend on continuing this blog after today. I will continue to send my kids to school with healthy packed lunches throughout the years, but I no longer have the time to dedicate to writing the posts.

Day 170 – Crackers and Ham

Well, folks, this is it…the last week of school. Thursday is the last day. Let’s make it a good week!

Today, M is getting whole wheat crackers with slices of ham…sort of lunchables style. On the side, there is sting cheese, raw chopped veggie salad (this salad is amazing, has an oil free vinaigrette, and will be coming to Veggie Inspired in the next few weeks!) and for a little treat – Chocolate Chip Quinoa Snack Cake (also coming to Veggie Inspired soon!).  Enjoy your week!

Day 164 – Fig Bar

Is anyone else feeling lazier about packing the lunchbox as we draw nearer to the end of the school year? Maybe it’s just me.

Today, M will be enjoying a Nature’s Bakery Fig Bar, Cucumber Slices, Clementine and a few slices of hard salami.

Day 150 – Mexican Bean Dip & Chips

It’s Day 150!! Can you even believe that? We’ve come along way…only a little bit more to go. We’ve got this!

I made this Mexican Bean Dip yesterday. I make it all the time because it’s SO good. I though it was a good snack in honor of Cinco de Mayo coming up. We ended up eating this bean dip and chips for dinner last night. It doesn’t seem like a proper dinner, but really, all the food groups are there. This dip is chock full of protein, fiber, vitamins and minerals! I will have the recipe up soon on Veggie Inspired Journey…stay tuned. Of course, M is getting leftovers for lunch upon his request.

I threw in an orange and a slice of provolone to complete the box.

Day 135 – Apple and Peanut Butter

M said he wanted an apple with peanut butter, red bell pepper and animal crackers. The animal crackers were from the egg hunt this past weekend…not something we would normally buy, but a little treat never hurts every once in awhile. I added a slice of ham and a slice of mozzarella too.

A “lunchables” kind of lunch today…without all the sugary crap that comes along with the store bought kind. 🙂

Day 129 – Easter Ham

Hello!! Was anyone else on spring break last week? I sure hope your week went better than ours! We had illness, followed by 5 inches of snow, followed by an earthquake, followed by our furnace breaking, followed by car sickness. What a week!

We did manage to celebrate Easter a week early with my in-laws who will be out of town next weekend. Because of that we have some leftover Easter ham on our hands. I didn’t even bother making a sandwich out of it…just cut it up and he can eat it with a fork.

Here’s to getting back on schedule!
