Day 173 – Last Day of School – Cereal Bar, Fruit and Veggies, and Brownie

We made it! 173 days of packed lunches. Mostly nutritious ingredients with a few treats here and there (and almost all of those were homemade!). Above and beyond anything they would get in the cafeteria and much healthier and varied than most standard American sack lunches.

Today’s post is bittersweet not only because my little guy is no longer a 1st grader, but also because I do not intend on continuing this blog after today. I will continue to send my kids to school with healthy packed lunches throughout the years, but I no longer have the time to dedicate to writing the posts.

Da y 166 – Belgian Waffle

I hope everyone had a nice Memorial Day weekend. We FNALLY got our garden planted and I’m so excited!

Less than 2 weeks left of school this year. Seems crazy that my little guy will soon be a SECOND grader! Wow!

The kids were at their grandparents this weekend and my MIL made awesome Belgian waffles one morning. There were plenty of leftovers and they were nice enough to send them home with us. M is getting part of one in his lunch today!

Day 165 – Cheese Quesadillas

It’s clean out the fridge time! We are running low on food in the house and I won’t be grocery shopping for a few more days so we are making due. The kids had cheese quesadillas yesterday for dinner and I had a little leftover to send M in his lunch today. He’s also getting the remainder of the raspberries, an apple and a chocolate chip bar that I made with leftover quinoa (shhh, don’t tell M…he claims to not like quinoa). I am working on perfecting this Quinoa Chocolate Chip Bar, so stay tuned to Veggie Inspired for the recipe sometime in the future.

Day 161 – Pasta w/ marinara sauce

Happy Monday! We are in the final stretch now…less than 3 weeks of school left!

Today, M is getting leftover penne with marinara sauce, his favorite fruit salad and part of a dinner roll. Easy!

Day 160 – Deconstructed Stuffed Peppers

We had Stuffed Peppers for dinner last night. M wanted one in his lunch today, but it was kind of hard for him to cut with his kid’s knife, so I cut it all up first and just threw it in a bowl. Clementine for the fruit and a half piece of Banana Blueberry Bread for a little treat!

Day 159 – Black Bean Quesadillas

Back to leftovers! Black Bean Quesadillas – just smashed black beans with cumin, cayenne and squeeze of lime…in a tortilla with a little sprinkling of cheddar cheese and heated up in a skillet. Easy peasy and delicious!

Day 151 – Veggie Sausage Slider

Happy Monday, Friends. It’s May already. I feel like we are in the home stretch now.

Today M is getting a veggie sausage patty on a whole wheat dinner roll, so I’m calling it a veggie sausage slider! See how creative I am? LOL! On the side, a clementine, some fresh blueberries and a pickle.
