Today’s lunch is turkey and red bell pepper with a bit of mustard rolled up in a tortilla. String cheese, fruit and veggies on the side!

It’s clean out the fridge time! We are running low on food in the house and I won’t be grocery shopping for a few more days so we are making due. The kids had cheese quesadillas yesterday for dinner and I had a little leftover to send M in his lunch today. He’s also getting the remainder of the raspberries, an apple and a chocolate chip bar that I made with leftover quinoa (shhh, don’t tell M…he claims to not like quinoa). I am working on perfecting this Quinoa Chocolate Chip Bar, so stay tuned to Veggie Inspired for the recipe sometime in the future.

I made a delicious Barley Vegetable Salad for dinner last night. Lots of shredded veggies were involved and I had quite a bit leftover. I’m planning on making a slaw out of those leftovers today, but first I used a little bit in M’s wrap. We’ve got shredded green cabbage, zucchini and carrots. I added a slice of deli turkey and mozzarella and rolled it all up in a tortilla. Some fruit and a few potato chips and lunch is served!

Happy St. Patty’s Day! Of course, today is all about green. That means lunch is green too!
M actually requested the tortilla wrap…he didn’t specifically ask for a spinach tortilla because he didn’t know I had them, but it’s St. Patrick’s Day, so it’s happening. He did request everything that’s in it though…ham, cheese, pickle and red pepper.
Green fruit, veggie and even a treat to round out today’s green themed lunch.

You know how much I love dinner leftovers for lunch! We had these delicious veggie fajitas for dinner last night. The corn too. M decided he didn’t want the other sides we had last night (refried beans and spanish rice) so I added in some cucumbers with hummus and a handful of grapes. YUM!

The biggest hit of dinner last night was broccoli. M has always loved broccoli, but the fact that one of my twins had THREE helpings of it yesterday is a huge win! We had a little bit leftover, though, so M is getting some in his lunch today.
The turkey sandwich the other day wasn’t his favorite. Quite a bit of it came back. I know he hasn’t really cared for it in the past, but since it’s been awhile I thought I’d try. I’m not making that mistake again and today he’s getting ham!
Rounded it out with the remaining cantaloupe and a pickle.
